
I had such a nice lunch plan. I waited all week to go and pick the right fish… And this is where the drama starts…
I jump on my bike. The sun is shining, so the sharp cold air doesn’t bother me at all. While waiting for the green light, counting in my head what I need to buy before I start to cook, how much time I can spend at the store, when I will be ready with the dish to take photos (light is not as good as it was month ago), and so on… Greeeeen!!! Cycling faster than ever, I get there in a speed time. I just have to park my bicicletta and I am free to run in and… see that something changed… The store looks strange like never before, the fish chilled counter is EMPTY! I spot “my fish man”. Ok, ask him what’s going on? – “ We are closing.” WHAT? – “ We have to move”. Ok, it is not that bad like I thought. So where can I find you? He smiles first… and then he tells me the address. Hey, cool not far. A bit farther than now but with the bike or with the car few minutes away. Super! Ok, I am a bit sad but I have other fish stores nearby, they will do for 2 weeks… He keeps looking at me and I see that this is not all that he wants to tell me…What’s up? Is there something else? – “Mhmmm…” – What? What is it? – “ You want to know when we open, don’t ya?” Oh yeah, sure. Let me guess, you need probably 2 or 3 weeks? He takes a deep breath – like a teenager which is just about to tell his parents that this what they will hear at the Teacher/Parents night will disappoint them – and with the speed of machin gun he says – “End of 2016″ – …I hear this news like a slow motion! Speechless and sad, I’m just able to say “Ok, I will come tomorrow to grab more things…” I turn around and with tears in my eyes, for the last time I walk out of my favourite store (ok for the last time til end of 2016, and for the last time at this place). With mixed feelings I went home. Get yourself together girl tomorrow is a new day. Next day I went to the other store which have a good fish offer, but after waiting 10 minutes until someone comes and take care of the long customers line, I went home strongly convinced that whatever I will cook it will not comfort me. I wanted to have fish, which I can proudly present on PB&co and there will be Egg just Egg. And there is no way that I will post that! And now comes the question of my BF: “What do you cook today?“ ME: “ Poached eggs on mashed potatoes and spinach” BF: “That sounds great! You have ideas! How do you make it?” I did answer all the questions and then I said: “I will send you pictures how it looks like”. And while I took those pictures I thought that it is not such a bad idea to post that as well. Maybe it will be helpful for you dear readers to have a recipe which doesn’t take much time to prepare. It can be used as an emergency when you doubt your culinary creativity, or when something unexpectable blow up your lunch plans.

And this is what you need:
For 2:
- 4 middle size eggs
- 1kg fresh spinach leafs
- 2 middle chop onions
- 8 potatoes
- 150ml milk
- 25gr butter
- 2 garlic cloves
- nutmeg
- oil
- salt, pepper
- sumac

Peel, wash and cut potatoes. Cook them in a salty water for about 20 minutes. In that time clean, wash and dry the spinach. In a frying pan heat up half of the butter with a bit of oil. Add onions and braise them lightly. Add spinach and mix gently to combine onions with the leafs. Press the garlic cloves into it, add salt, pepper and the nutmeg. Stir the spinach, turn the heat to the middle level and cover it up so the spinach will produce the stock. Let it cook for 10 minutes. Taste it and if you need to add more spices. In a small pot warm up the milk with the rest of the butter and some grated nutmeg. Decant and evaporate the potatoes. Pour the milk/butter mix to it and mash them.

Crack each egg into a separat saucer. In a wide pot boil the water with 1Tsp of vinegar and a bit of salt. When it cooks stir the water until you make a whirl and gently add the eggs – 1 at a time. Turn down the heat and if it’s necessary “cover” the yolk by using a spoon with the egg white. 4 minutes and it is ready. Take it out on a kitchen paper to dry it. Put potatoes, spinach and eggs on the plates. Sprinkle salt and pepper on it (what you see on the picture below is sumac. It brings a bit of a sour note).
