Remember last Friday when I posted on facebook an empty plate? Yep, the fish was gone too fast. I had no chance to take a foto… But, I think that this is a very good opportunity to carry out my old idea of drawing the food (meal). So here I come with my first “meal drawing” and the following recipe.
And this is what you need:
For 4 :
- 800 gr halibut fillet (without skin)
- 3 tbsp of flour
- freshly pressed juice out of 1 lemon
- 2 tbsp of oil
- salt, pepper
- 1 long cucumber
- 2 “ready to eat” avocados
- 400 gr cocktail tomatoes
- cilantro bundle – finely chopped
- freshly pressed juice out of ½ sweet lime
- olive oil
- salt, pepper
And this is how I do it:
Wash and dry off the fillets. Cut them in about 7cm long pieces and place it on a plate. Pour over the lemon juice, add salt and pepper, cover it and leave it in the fridge for about 30 minutes.
Wash cucumber and tomatoes. Halve the cucumber and take out the seeds. Cut it in small square pieces. Do the same with tomatoes. Halve the avocados, take out the stones, pour a bit of lime juice over it. Gently take out the avocado flesh and cut it like the other vegetables. Mix all of it together in a bowl. Add cilantro, olive oil, salt, pepper and the rest of the lime juice. Stir well and let it cool down in a fridge.
Take out the fish, and dry it from the juice. Sprinkle with the flour each piece of the halibut (it should be a very thin cover). Heat the oil on a pan and fry the fish 3-4 minutes on the each side. After that time take it out and put it on a kitchen paper to dab the oil away. Serve with the avocado-cucumber salsa and with fresh lime slices.
I don’t use much oil to fry the fish. You can also fry it just for 2 min. each side and then put it in the oven for about 10 min at 160°C.
