Well, some of you will say ”how trendy is that”, but I don’t care about trendy or not. But it is true, lately I hear more and more how “in” beetroot is. In polish cuisine, it is always in. Our national soup which we eat on Christmas Eve is called “Barszcz” and the main ingredient is beetroot, so I’m not really trendy, I would say traditional with a bit of modern touch. The other thing is, that I love this creme soup since I cooked it for the first time, and I know that there are some of you out there which want to have this recipe badly :-)! So, here you go! You can have it! Have fun cooking! And, be happy to eat it! No, I don’t have second thoughts! No, not at all! – Ok, maybe a bit… but as soon as you will say that you got this recipe from this page, I’m ok with that, because I know that this is going to make others happy.
And this is what you need:
- 1,5 kg of beetroot
- 2 liters of vegetable broth
- 1 middle onion
- 2 garlic cloves
- juice of ½ lemon – freshly pressed
- 200 gr of natural yogurt
- fresh chopped parsley
- 1 Tbsp sunflower oil
- 1 Tbsp of cold butter
And this is how I do it:
Wash the beetroot and put in a pot (with peel), pour water and bring it to the boil. Put salt and sugar into the water, turn down the heat and let them cook slowly until they are soft. Let them cool down and peel of the skin. Cut the beetroot, the onion and garlic cloves into small pieces. Heat up oil in a pot and add onion and garlic. Fry it for a few minutes. Pot the beetroots to it. Fry while stirring them for about another 3 minutes. Pour the broth to it and bring it to the boil. Turn down the heat and add salt and pepper, and let it slowly cook for about 20 minutes. Take the pot on the side. Add yogurt, blend the whole soup and pass it through the sieve. Put it one more time on the stove, add a bit of lemon juice and taste it. If it’s too sour add some sugar. Take it off the stove and add cold butter to it. Mix it with the blender one more time for serving. Decorate with a drop of yogurt and parsley.
Cold butter will give the soup a creme consistency and will help you to get a nice foam.
